Salam.
Hello humans. It's been awhile since I particularly wrote anything. I'm sorry, been busy and just not in the mood to write tbh.
As usual, end of year post, will be about recapping the whole year, let's start!
1) First, one of my closest friend got married!!! Congrats love, and I'm wishing you all the best for the future!!!
2) My parents finally let me drive the Swift back and forth from Perak-KL, which is awesome but then somehow it teaches me about money. ><
Uh actually scrap that thought of recapping, cuz nothing awesome happens except me now have a car and my friend got married. Uh. Yeah.
May I somehow make some resolution? Which of course I'll try hard to achieve it!
1) Solat tak tinggal >< my only weakness is this, ahh
2) Successfully plan a back-forth trip to Korea with bunch of friends! My parents seemed okay with it, just need to collect more money!
3) Visit my sis who gonna fly to France in June! Cant wait!
4) And, somehow settle down with someone.
Alrighty! Thats all, folks! Thankyou for the visit to my blog. I dont even know what are you guys doing ere but yeah Happy New Year and may the new year brings a lot of joy and luck and blessings to each one of you!
Thankyou, and goodbye 2013!
Salam.

1/2 cup castor sugar
1 egg + 1 egg yolk
2 tsp vanilla extract
Chocolate chips and assorted roasted nuts
1) Whisk together dry ingredients, this is to remove lumps and skips sifting step (cuz lazy like that)
2) Mix melted butter and sugars until the mixture is thick and fudgy
3) Add egg, yolk and vanilla, mix well
4) Fold in dry ingredients
5) Fold in choc chips and nuts
*Here is where I stop following original recipe*
6) Refrigerate for minimum 30 minutes or overnight (me, overnight cuz lazy like that)
7) Preheat oven at 170 C and thaw the dough
8) Scoop about 1 tbsp of dough (see pic below) and place in on baking sheet lined with parchment paper
9) Bake for 15 minutes, rotate the sheet about halfway baking time
DO NOT OVERBAKE, by the time 15 minutes up, the center is still soft but the sides are set, s'okay cuz the cookies will still continue to bake as it cools off.
Store in airtight container and make sure to demolish within a week! Cuz its delicious like that.
Tips: Best eaten as its warm, when its out of oven cooling off. But to achieve the same effect, just pop your piece in the microwave for 10 seconds and enjoy!!

BAKE! : Vanilla Cupcake with Strawberry Filling with Buttercream Frosting
Vanilla Cupcake with Strawberry Filling with Buttercream Topping
Cupcake:
150g butter, softened
130g castor sugar
3 eggs
175g all-purpose flour
1/4 cup (60 ml) fresh milk/low fat milk
1 tsp vanilla extract
*for chocolate cupcake, subtitute 15g of the flour with cocoa powder*
1) beat butter and sugar until pale and fluffy
2) add eggs and vanilla
3) add in half of the flour, mix well
4) add in milk, mix well and lastly add the other half of flour mix well
Scoop into paper cups and bake at 180 C for 18-20 minutes. Cupcakes is done when it is firm to touch. Again, DO NOT overbake!
Buttercream:
113g butter
1/4-1/2 cup non-dairy whipping cream
1/4 cup icing sugar
1 tsp vanilla
1) whip whipping cream until soft peak
2) beat butter and icing sugar, and it vanilla
3) combined the whipped cream with the buttercream mixture
Made it this way, to avoid refrigerating my cupcakes. Due to Malaysia's hot weather buttercream need to be refrigerated. Therefore, by adding whipped cream to the mixture, the topping will not melt in room temprature, insyaAllah.
To Assemble
Cut holes in the cupcakes, don't cut too deep, just roughly 1/2 way through the cakes. Fill in the cavity with strawberry fillings. Next, trim the cut-out cake to form flathead and placed back on the cavity to cover the filling. Next, iced the cake with the frosting and sprinkle crumbled cakes and dollop leftover fillings onto the icing.
DONE!

280g all-purpose flour
10g cocoa powder
2 tbs cornstarch
2 tbs milk powder
1/2 tsp baking powder
Pinch of salt
1 tbs black treacle
1 egg yolk
1 tsp vanilla essence
Chocolate chips
Assorted nuts - roasted & chopped
1) Cream butter and sugar, until smooth, either by hand or mixer, better by hand, extra exersice ^^
2) Add in egg yolk and vanilla, mix well, and then add treacle mix well
3) Fold in dry ingredients, that has been sieved together (or just gently whisk everythign together, cuz the main point here is NO LUMPS) and and nuts and chips as much as wanted
*by now, make sure oven is already preheating at 170 - 180 C*
4) Take roughly 1/2 - 1 tsp dough and shaped into balls, dough can be handled by hands or you can use spoons, mana-mana yang selesa, I used hands cuz easier, and lesser things to wash up later, place in on your tray, and flatten them up little bit, they do spread but not much, so help them a little bit by flattened the slightly
5) Bake around 12-15 minutes, but after 10 minutes keep and eye on these babies, just to make sure you dont burned them, cuz I burned too many of these lol, or bake it at lower temperatur around 160 C for 20 minutes at least
Done. Good luck.
